Bacon and broccoli soup



1.In a saucepan, melt butter over moderate heat. Add onion, half the garlic and the bacon; cook and stir 3 minutes or until soft. Add broccoli; cook and stir 2 minutes. Add flour; cook and stir 1 minute.
2.Stir in crumbled stock cubes and water until mixture is smooth. Simmer 10 minutes or until broccoli is just tender. Transfer 3 ladles (about 1/2 cup) of soup to a heatproof jug. Set aside. Using a stick mixer, blend soup in pan until smooth. Return reserved soup to pan. Cook and stir over low heat until heated. Season.
3.Preheat an oven-grill to high. Grill 1 side of bread slices until golden. Turn. Combine cheese and remaining garlic; sprinkle over bread slices. Grill until golden and melted. Serve soup with cheesy toast.
