Ingredients
2/3 cup (160ml) cream
1/4 cup (55g) caster sugar
100 gram dark or milk chocolate, chopped (or the chocolate bar of your choice)
1 tablespoon brandy, optional
12 scoops vanilla ice-cream
1/2 cup mini marshmallows
1/4 cup (35g) unsalted roasted peanuts, chopped
Method
1. In a medium saucepan, combine cream and sugar and bring to the boil.
2. Remove from the heat, stir in the chocolate and brandy, continue stirring until melted; cool slightly.
3. Place the ice-cream scoops into glasses, top with the marshmallows and chocolate sauce; sprinkle with the peanuts.
The chocolate sauce can be made several hours ahead.
