1.Use vegetable peeler to remove thin strips of rind from lemon. Place rind, chopped mint and the water in medium saucepan, bring to the boil. Remove from heat, stand 20 minutes.
2.Strain mint mixture, return to same pan, stir in sugar, juice and gelatine. Stir mixture over low heat until sugar and gelatine are dissolved.
3.Pour mixture into eight small (½-cup/125 ml) glasses. Refrigerate about 5 hours or until set. Serve topped with extra mint.
