Ruby grapefruit jellies
Golden grapefruit jellies


1.Make ruby jellies by sprinkling gelatine over half of the juice in small heatproof jug; stand jug in small saucepan of simmering water. Stir until gelatine dissolves.
2.Stir sugar, syrup and remaining juice in small saucepan over low heat until sugar dissolves. Remove from heat, stir in gelatine mixture. Pour mixture into deep 15cm-square cake pan. Refrigerate overnight or until set.
3.Make golden jellies following ruby jellies method; add the food colouring with the gelatine mixture.
4.Cut jellies into squares using hot dry knife in pan and toss in sugar just before serving.
