1.Combine the cherries in a bowl with 1 tablespoon of the sugar and 1 tablespoon of the amaretto. Stand for 10 minutes.
2.Meanwhile, combine cream cheese with 2 tablespoons of sugar and remaining amaretto in a small bowl until smooth.
3.Beat the egg whites in a clean small bowl with an electric mixer until soft peaks form. Gradually add the remaining sugar, beating until the sugar is dissolved between additions. Fold the meringue mixture into the cream cheese mixture.
4.Divide the cherries among four 1½-cup (375ml) serving glasses. Top with the cream cheese mixture. Serve with the biscuits.
