Add the oil and garlic in a medium saucepan. Simmer over low heat for 20 minutes, stirring occasionally until the garlic is lightly golden.

Meanwhile, add chilli flakes, peanuts, seasoning, doenjang, smoked paprika and caster sugar to a large heatproof bowl. Place a sieve over the top on the bowl in preparation for the next step.

Carefully pour the contents of the saucepan into the bowl through the sieve. Allow garlic to drain before placing on a lined baking tray to cool until crisp.

4.

Gently stir the ingredients with the oil until well combined. Allow to cool to room temperature.

5.

Add crispy garlic and fried shallots to oil mixture; stir to combine.

6.

Ladle into sterilised jars and store in a cool, dry and dark place for up to 2 months.

Which oil is best for chilli crisp?

Any neutral oil with a high smoking point is suitable for this recipe.

What is Maggi seasoning?

Maggi seasoning is made from fermented wheat and imparts a deeper, complex umami flavour than soy sauce. Use interchangeably if preferred.

Chilli crisp flavour variations

Swap doenjang for miso paste, gochugaru (Korean chilli powder) for smoked paprika, palm sugar for caster sugar or macadamias for peanuts for different flavour profiles.
