1.Preheat oven to 180°C. Grease 24cm x 32cm swiss roll pan; line base and long sides with baking paper, extending paper 5cm over sides.
2.Sift dry ingredients into large bowl; stir in apple, eggs and oil. Pour mixture into pan.
3.Bake slice about 30 minutes. Stand slice in pan 10 minutes before turning, top-side up, onto wire rack to cool.
4.Meanwhile, make walnut praline: Stir sugar and the water in small saucepan over low heat until sugar dissolves. Bring to the boil; boil, uncovered, without stirring, about 10 minutes or until toffee is a caramel colour. Remove from heat; allow bubbles to subside. Place nuts in single layer on baking-paper-lined oven tray; pour toffee all over nuts. Stand at room temperature until set. Chop praline finely.
5.Spread slice with icing; sprinkle with praline. Serve.
