Shallot tartlets

These delicious tarts have a buttery crust and make a fantastic light lunch served with salad.

1.Sift flour into bowl, rub in butter. Add egg yolks and enough water to make ingredients cling together. Press dough into a ball, cover; refrigerate 30 minutes.
2.Preheat oven to 200°C (180°C fan-forced).
3.Roll pastry until large enough to line six 11cm flan tins. Place tins on oven tray. Prick pastry all over with fork; bake about 15 minutes or until golden brown. Brush sides and bases with egg white; cool.
4.Reduce oven to 180°C (160°C fan-forced).
5.Meanwhile, to make filling, heat butter in frying pan; cook shallots, stirring constantly, until soft; drain on absorbent paper. Cool. Combine egg, cream, crumbled cheese and shallot mixture in medium bowl; pour into cases.
6.Bake tartlets about 15 minutes or until filling is set.
