Method

1.Preheat oven to 180°C (160°C fan). Grease three 1-cup-capacity ovenproof dishes or one 750ml baking dish.
2.Scaled milk in a saucepan, then sprinkle in sago. Cook over moderately low heat, stirring, for 10 minutes or until mixture thickens and sago becomes clear. Stir in sugar, cinnamon and lemon zest. When sugar has dissolved, remove from heat and stir in egg yolks.
3.Pour mixture into prepared dishes and bake for 30-35 minutes or until creamy and lightly browned on top. Serve hot or cold.
