Classic meatloaf

This family meal has been a classic dinnertime favourite for many years.

Bake this as one lovely meatloaf for a family meal, or in smaller tins for the individual mini versions. Either way, the kids will love it for dinner, or sliced for sandwiches in their school lunches. Meatloaf is always a tasty family dinner.

1.Preheat oven to 200°C/400°F. Line a large oven tray with baking paper.
2.Place bread and milk in a large bowl; stand 10 minutes.
3.Heat oil in a small frying pan over medium heat; cook onion and garlic, stirring, for 5 minutes or until softened.
4.Add onion mixture to bread mixture with remaining ingredients; season well.
5.Combine ingredients well using your hands
6. Shape mince into a 30cm (12in) log in centre of paper.
7.Cover mixture with pancetta slices, slightly overlapping.
8.Brush with sauce combined with brown sugar. Bake meatloaf for 45 minutes or until cooked through.

Bake mini sized meatloafs in individual tins for 20 minutes
