Madeira cake

1.Preheat oven to 160°C (140°C fan-forced). Grease deep 20cm (8 inch) round cake pan; line base with baking paper.
2.Beat butter, rind and sugar in small bowl with electric mixer until light and fluffy; beat in eggs, one at a time. Transfer mixture to large bowl, stir in sifted flours. Spread mixture into pan; bake 20 minutes.
3.Remove cake from oven; sprinkle with peel and nuts. Return to oven; bake about 40 minutes. Stand cake in pan 5 minutes before turning, top-side up, onto wire rack to cool.

This cake does not actually contain the sweet wine called Madeira. Its name is derived from the fact that it used to be served with a small glass of Madeira for afternoon or high­ tea in Victorian England.
