1.Place cake crumbs in a large bowl. Add ½ cup vanilla frosting, stir to combine. Roll -cups of mixture into eight balls. Place on an oven tray, loosely cover with plastic wrap. Refrigerate for 2 hours or until firm.
2.Place remaining vanilla frosting in a microwave- safe jug. Microwave frosting on HIGH (100%) for 10 seconds or until melted slightly. Carefully pour frosting over balls, stand until frosting sets slightly. Place balls in wafer baskets. Secure baskets to cake board with a little frosting.
3.Place chocolate frosting in a microwave-safe jug. Microwave on HIGH (100%) for 10 seconds or until melted slightly. Carefully pour chocolate over balls; scatter with hundreds and thousands, then top with cherries.
20cm (8-inch) round or square cake board oven tray plastic wrap We used one double unfilled sponge to make 4 cups of cake crumbs. This recipe is easy to double or triple. If using butter cream instead of the vanilla frosting, you will need one quantity of butter cream.
