Method

1.Preheat oven to 200°C.
2.Combine potatoes, garlic, ⅔ cup of the parsley and 2 tbsp of the oil in a medium bowl. Layer potatoes in a baking dish.
3.Bake potatoes, uncovered, for 50 minutes or until potato is almost tender. Place fish on potato and bake a further 15 minutes.
4.Meanwhile, combine anchovies, olives, remaining parsley, basil and remaining oil in a small bowl.
5.Sprinkle anchovy mixture on fish. Bake a further 5 minutes or until fish is just cooked through. Serve with lemon wedges, if you like.
