1.Grease a 14cm x 21cm loaf pan, line base and sides with paper; grease paper well.
2.Combine sugar, butter, apricots, rinds and juices in saucepan. Stir constantly over heat without boiling until sugar is dissolved.
3.Transfer to large bowl, stir in apple, banana and egg, then sifted flour in two lots. Pour into prepared pan.
4.Preheat oven to 180°C (160°C fan-forced). Bake in for about 1¼ hours. Stand 5 minutes before turning on to wire rack to cool.
We used a Granny Smith apple in this recipe. You will also need one medium overripe banana for this recipe. Keeping time: 1 day.Note
