1.Preheat oven to 180°C (160°C fan-forced). Grease 12-hole (½-cup/125ml) oval friand pan.
2.Whisk egg whites in medium bowl until frothy. Stir in butter, rind, ground almonds, then sifted icing sugar and flour. Spoon mixture into pan holes.
3.Bake friands 10 minutes. Remove friands from oven; press a small, 1cm (½-inch) deep hole in top of each friand with the end of a wooden spoon. Spoon fruit mince into holes; bake about 10 minutes.
4.Stand friands in pan 5 minutes before turning, top-side up, onto wire rack to cool. Serve dusted with sifted icing (confectioners’) sugar.
