Malt loaf is a type of sweet leavened bread made with malt extract as a primary ingredient. Malt loaf has a chewy texture, and contains sultanas.

1.Preheat oven to 160°C (140°C fan-forced). Grease 15cm x 25cm (6 inch x 10 inch) loaf pan; line base and sides with baking paper, extending paper 5cm (2 inches) above long sides.
2.Sift flour into large heatproof bowl; stir in sugar and sultanas.
3.Add soda to the hot water in medium jug; stir in milk.
4.Place malt and treacle in medium saucepan; stir over low heat until mixture begins to bubble; stir in milk mixture. Stir foaming milk mixture into flour mixture.
5.Spread mixture into pan; bake about 1¾ hours. Stand loaf in pan 5 minutes before turning, top-side up, onto wire rack to cool.

Liquid malt is available from brewing shops and some health-food stores.
