2.Combine coleslaw and remaining aïoli in another medium bowl; season to taste. Spread four bread slices with coleslaw mixture; top with four slices bread.
3.Spread bread with egg mixture, then top with remaining bread.
4.Cut sandwiches in half, push a long toothpick into each sandwich to hold them together.
