Cherry and almond slice

This sweet cherry slice with a crunchy almond topping is sure to delight. Cherries add a festive touch to this simple slice that can be made all year.

Whether you prefer them sweet or sour, one thing is for sure; cherries add some festive delight to many desserts. Whilst cherries aren’t traditionally festive, the fact they come in season at the same time in Australia means they have been adopted as our Christmas fruit.

1.Preheat the oven to 180C (160’C fan forced). Grease a 20cm x 30cm slice pan. Line base and sides with baking paper bringing paper 2cm above side of pan. 2 Combine the flour, coconut, sugar and melted butter in a medium bowl. Press the flour mixture firmly over base of the prepared pan and bake for about 20 minutes or until browned lightly. Cool. 3 Meanwhile, place the cherries and their syrup and the sugar in a medium saucepan over medium heat, bring to a simmer. Cook for 10 minutes, stirring occasionally. Mix corn flour with 1 tablespoon of the cherry liquid and add to the pan. Cook for 2 minutes or until thick. Add orange rind and set aside to cool slightly. 4 Spread cherry mixture over the base; refrigerate while preparing Almond Topping. 5 ALMOND TOPPING Beat the butter and sugar in a medium bowl with an electric mixer until lightly and fluffy. Add eggs one at a time, beating until just combined. Add the flour, almond meal, marzipan and pistachios and mix to combine. 6 Spoon Almond Topping over the cherry mixture and carefully spread out evenly. Sprinkle with almonds and baked for 40-45 minutes or until browned. 7 Dust with icing sugar and cut into bars to serve. Suitable to freeze. Not suitable to microwave.
