Freshly made classic French brioche makes a simple yet delicious breakfast with a cup of fresh coffee.



1.Combine yeast, water and 1 tablespoon of the caster sugar in small bowl, whisk until yeast is dissolved. Cover, stand in warm place about 10 minutes or until mixture is frothy. Sift flour, remaining caster sugar and salt into large bowl, add yeast mixture and eggs, stir until just combined. Turn dough onto floured surface, knead about 10 minutes or until dough is smooth and elastic.
2.Divide butter into 10 equal portions, knead each portion into dough, kneading well after each addition until all the butter is incorporated and dough is smooth and glossy. Place dough into large bowl, cover, refrigerate overnight.
3.Divide dough into 3 equal portions, shape into 45cm sausages. Place sausages onto large greased oven tray, plait sausages, cover, stand in cool place about 1 hour or until dough has nearly doubled in size. Plait and brush with extra egg, sprinkle with sugar. Bake in moderately hot oven 10 minutes, reduce heat to moderate, bake a further 15 minutes.
