Beer damper

What could possibly be more Australian than this beer damper? You'll be surprised at the subtle yet delicious flavour your best ale will create in this traditional bread.

1.Preheat oven to moderately hot, 190°C. Lightly grease an oven tray.
2.Sift flour, baking powder and salt together into a large bowl. Stir in parmesan, parsley and caster sugar.
3.Make a well in the centre of dry ingredients. Pour in beer. Using a bread-and-butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
4.Turn onto a lightly floured surface. Knead lightly. Form into a round. Place on tray. Sprinkle with sesame seeds.
5.Bake for 35-40 minutes, or until it sounds hollow when tapped. Cool for at least 10 minutes before slicing. Serve warm with butter.

Before baking, use a floured knife to score the top of the dough to form six or eight segments.
