Method

1.Preheat oven to 180°C (160°C fan). Place bread in a baking tray, drizzle with half the olive oil and season. Bake 10 minutes, until pale golden.
2.In a medium oven-proof saucepan, place remaining oil and heat over high heat. Add garlic and fry for 5 minutes, until deep golden in colour. Add wine, chilli, thyme and bay leaves; bring to the boil.
3.Add prawns and parsley. Scatter croutons over, then place in oven. Bake 10 minutes until prawns are just cooked.
