Crunchy on the outside and cheesy on the inside, these air fryer sweet potato polenta chips will be a hit at your next gathering.
You’ll need to refrigerate the polenta mixture for 1 hour before air frying.

Prick sweet potatoes all over with a fork. Place in the air fryer and cook at 180°C for 40-60 minutes, or until tender when pierced with a fork. Set aside to cool slightly. While still warm, cut in half, scoop out the flesh. Mash until smooth. Place in a large bowl, keep warm and set aside.
Meanwhile, place milk in a medium saucepan over medium heat; bring to a boil. Add polenta in a steady stream; whisk for 2-3 minutes or until very thick. Add to sweet potato mash, with honey, butter, cheeses and garlic, season with salt and pepper.
Line a 20 x 30cm slice pan lined with non-stick baking paper. Spread sweet potato mixture into pan, smooth the top. Refrigerate for 1 hour, or until firm. Turn out onto a board and cut into approximately 4cm square pieces.
Place seasoned flour, beaten egg and breadcrumbs in separate bowls. In batches, dust in flour and dip in egg and crumbs. Repeat with the remaining sweet potato mixture and refrigerate until ready to cook.
Preheat the air fryer to 200°C for 5 minutes. Spray chips generously with olive oil cooking spray. Place in the air fryer basket, in batches, in a single layer. Cook for 8-10 minutes, until golden and crisp. Repeat with the remaining polenta chips.
Serve cheesy polenta chips sprinkled with extra parmesan and parsley. Drizzle with hot honey and accompany with aioli.Â
What is polenta made from?
Polenta is also known as cornmeal. It is a flour-like cereal made of ground corn (maize). The name of the dish made from it is also polenta.
How do you cook polenta?
Our twist on polenta chips combines the polenta with milk and sweet potato and plenty of cheese. However, the usual way to cook polenta is to combine it with water in a saucepan and stir constantly until the mixture thickens. Often, grated cheese is then stirred through. You can also add other flavourings, like pumpkin or pesto.
