1.Place flour in a shallow bowl. Lightly beat buttermilk and chilli sauce in a second shallow bowl. Place breadcrumbs in a third shallow bowl. Dust pickles in flour, shaking off excess, dip in buttermilk mixture, then coat in breadcrumbs. Spray generously all over with cooking spray.
2.Preheat a 7-litre air fryer to 200°C/400°F for 3 minutes.
3.Taking care, place one-third of the pickles, in a single layer, in the air fryer basket; at 200˚C/400˚F, cook for 6 minutes until pickles are golden. Transfer to a plate. Repeat cooking with the remaining pickles.
4.Meanwhile, to make ranch dipping sauce, combine remaining ingredients in a small bowl.
5.Sprinkle pickle chips with salt flakes and serve with ranch dipping sauce.
