Ingredients
150 gram sashimi tuna, finely chopped
1 shallot, finely chopped
1 tablespoon coriander finely chopped fresh mint and coriander (cilantro)
1 tablespoon lime juice
1 tablespoon fish sauce
6 square wonton wrappers
vegetable oil, for deep-frying
24 fresh baby coriander leaves
Method
1. In a small bowl, combine tuna, shallot, herbs, juice and sauce; season to taste.
2. Cut each wrapper into four triangles. Heat oil in wok; deep-fry triangles, in batches, until crisp. Drain on absorbent paper.
3. Place triangles on serving platter; top with a heaped teaspoon of tuna mixture and a coriander leaf.
