Ingredients: 1 egg; 1 tablespoon skim milk; 6 slice multigrain french bread stick (90g); cooking-oil spray; 80 gram smoked salmon; 1/2 small avocado (100g), cut into quarters; 20 gram rocket leaves (arugula)

Method

1.Whisk egg and milk together in a small bowl; season.

2.Add bread to egg mixture, turn to coat. Stand for 2 minutes or until bread has soaked up the mixture.

3.Lightly spray a large heated non-stick frying pan with oil; add bread to pan, cook, over medium heat, for 2 minutes each side or until golden and cooked through.

4.Place french toast on serving plates; top with salmon, avocado and rocket leaves. Sprinkle with dill, if you like.
