Pork sausage & broccoli stir-fry
  • 6 thick pork sausages (700g)
  • 1 packet (450g) hokkien noodles
  • 1/4 cup xo or oyster sauce
  • 1 fresh large red chilli, thinly sliced
  • 250 gram broccoli, cut into small florets
  • 90 gram garlic chives, chopped coarsely

    Cook sausages in a medium saucepan of boiling water for 12 minutes or until cooked through; drain, cool then slice sausages.

    Pour boiling water over hokkien noodles in a heatproof bowl, separate with fork; drain. Heat oiled wok over high heat; stir-fry sausages with XO or oyster sauce and the chilli.

    Add broccoli; stir-fry 1 minute or until tender, adding a little water if necessary. Add noodles; stir-fry until hot.

    Stir in garlic chives before serving.
