Ingredients: 250 gram orecchiette pasta; 2 tablespoon drained sun-dried tomatoes, coarsely chopped; 1 (100g) red onion, thinly sliced; 1 (150g) green capsicum, thinly sliced; 1/2 cup coarsely chopped fresh flat-leaf parsley; Sun-dried tomato dressing; 1 tablespoon sun-dried tomato pesto; 1 tablespoon white wine vinegar; 2 tablespoon olive oil

Ingredients

250 gram orecchiette pasta

2 tablespoon drained sun-dried tomatoes, coarsely chopped

1 (100g) red onion, thinly sliced

1 (150g) green capsicum, thinly sliced

1/2 cup coarsely chopped fresh flat-leaf parsley

Sun-dried tomato dressing

1 tablespoon sun-dried tomato pesto

1 tablespoon white wine vinegar

2 tablespoon olive oil

Method

1.Cook pasta in a large saucepan of boiling water, uncovered, until just tender; drain. Rinse under cold water; drain.

2.Meanwhile, to make sun-dried tomato dressing, place ingredients in screw-top jar; shake well.

3.Place pasta in large bowl with remaining ingredients and dressing; toss gently to combine.
