Ingredients

Mediterranean pasta salad
  • 250 gram orecchiette pasta
  • 2 tablespoon drained sun-dried tomatoes, coarsely chopped
  • 1 (100g) red onion, thinly sliced
  • 1 (150g) green capsicum, thinly sliced
  • 1/2 cup coarsely chopped fresh flat-leaf parsley
Sun-dried tomato dressing
  • 1 tablespoon sun-dried tomato pesto
  • 1 tablespoon white wine vinegar
  • 2 tablespoon olive oil

Method

    Cook pasta in a large saucepan of boiling water, uncovered, until just tender; drain. Rinse under cold water; drain.

    Meanwhile, to make sun-dried tomato dressing, place ingredients in screw-top jar; shake well.

    Place pasta in large bowl with remaining ingredients and dressing; toss gently to combine.
