Lamb haloumi wraps

These Greek-inspired warm lamb wraps are very moreish and great for feeding a crowd.

Lamb haloumi wraps
  • 600 gram (1¼ pounds) diced lamb fillet
  • 2 teaspoon piri piri seasoning
  • 4 bamboo skewers
  • 250 gram thinly sliced haloumi cheese
  • 4 large pita breads (320g)
  • salad leaves and yoghurt, to serve

    Combine diced lamb and piri piri seasoning in medium bowl. Thread lamb onto skewers. Cook skewers on heated oiled grill plate (or grill pan or barbecue).

    Cook haloumi on heated oiled grill plate until browned both sides. Divide lamb and haloumi among bread (320g), top with greens and yoghurt; roll to enclose filling.
