There are those for whom hard sauce is the whole point of Christmas pudding, rather than just the bit on the side.


Hard sauce
  • 250 gram unsalted butter, softened
  • 2 cup sifted icing sugar
  • 1/4 cup cream
  • 2 tablespoon brandy, or 1 tablespoon brandy essence


Hard sauce

    Beat butter and icing sugar in a small bowl with an electric mixer until as white as possible. Beat in cream and brandy.
