Creamy salmon gnocchi
- potato gnocchi
- 500 gram packet salmon fillet, skinless,
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- 1/2 cup sour cream
- 1/2 cup frozen peas
- 1 lemon, grated zest
- 2 tablespoon lemon juice
- basil, chopped
Method
Creamy salmon gnocchi
- 1Cook gnocchi in a saucepan boiling, salted water following packet instructions. Drain well.
- 2Meanwhile, heat a large frying pan on medium. Brush salmon with a little oil and season to taste. Cook 2-3 minutes each side for medium, or until cooked to your liking. Transfer to a plate.
- 3Heat remaining oil in same pan on medium. Sauté garlic 1 minute, taking care not to burn. Stir in sour cream, peas and juice. Bring to a simmer.
- 4Add drained gnocchi to pan and toss well. Season to taste. Remove from heat. Stir basil and zest through.
- 5Divide among serving bowls and flake over salmon.
