Ingredients

Cranberry and muesli slice
  • 125 gram butter
  • 1/3 cup (75g) brown sugar, firmly packed
  • 2 tablespoon honey
  • 1 1/2 cup (135g) rolled oats
  • 1/2 cup (75g) self-raising flour
  • 1 cup (130g) dried cranberries
  • 1 cup (140g) roasted shelled pistachios, chopped coarsely

Method

    Preheat oven to 180°C (160°C fan-forced).

    Grease 20cm x 30cm lamington pan; line with baking paper, extending 2cm over two long sides.

    In a medium saucepan, melt butter with sugar and honey over medium heat without boiling, stirring, for about 2-3 minutes or until sugar is dissolved. Stir in remaining ingredients. Press mixture firmly into pan.

    Bake slice for about 20 minutes. Cool in pan before cutting.
