A quick version of the popular starter in many Indian restaurants, we use ready-made tikka paste.

Chicken tikka with cucumber-mint raita
- 1 kilogram chicken breast fillets, trimmed
- 1/2 cup (150g) tikka paste
Cucumber-mint raita
- 3/4 cup (200g) yoghurt
- 1 lebanese cucumber (130g), peeled, seeded, chopped finely
- 2 tablespoon finely chopped fresh mint
- 1 teaspoon ground cumin
Method
Chicken tikka with cucumber-mint raita
- 1Combine chicken with paste in large bowl.
- 2Cook chicken, in batches, on heated oiled grill plate (or grill or barbecue) until browned all over and cooked through.
- 3To make the cucumber-mint raita; combine ingredients in small bowl.
- 4Serve chicken with cucumber-mint raita.
