Chicken and corn impossible pie
  • 2 cup milk
  • 4 eggs
  • 90 gram butter, melted
  • 1/2 cup plain flour
  • 1 cup grated tasty cheese
  • 1 cup chopped cooked chicken
  • 125 gram can creamed corn
  • 1 tablespoon chopped parsley
  • 1 tablespoon snipped chives
  • baby rocket leaves, salad, to serve

Method

    Preheat oven to moderate, 180°C. Lightly grease a deep, 25cm pie plate.

    In a large jug, whisk together milk, eggs and butter; season to taste.

    Sift flour into a large bowl. Make a well in centre; gradually whisk in milk mixture.

    Mix in half the cheese, chicken, corn, parsley and chives; season to taste. Spoon mixture into prepared plate; sprinkle with remaining cheese.

    Bake 45-50 minutes, until firm. Serve in wedges topped with baby rocket. Accompany with salad.
