Chicken and corn impossible pie
- 2 cup milk
- 4 eggs
- 90 gram butter, melted
- 1/2 cup plain flour
- 1 cup grated tasty cheese
- 1 cup chopped cooked chicken
- 125 gram can creamed corn
- 1 tablespoon chopped parsley
- 1 tablespoon snipped chives
- baby rocket leaves, salad, to serve
Method
Chicken and corn impossible pie
- 1Preheat oven to moderate, 180°C. Lightly grease a deep, 25cm pie plate.
- 2In a large jug, whisk together milk, eggs and butter; season to taste.
- 3Sift flour into a large bowl. Make a well in centre; gradually whisk in milk mixture.
- 4Mix in half the cheese, chicken, corn, parsley and chives; season to taste. Spoon mixture into prepared plate; sprinkle with remaining cheese.
- 5Bake 45-50 minutes, until firm. Serve in wedges topped with baby rocket. Accompany with salad.
