Cheesy ham omelette
Nothing beats a simple omelette packed with salty ham and oozing cheese for a simple breakfast or easy lunch.

Cheesy ham omelette
- 8 eggs, separated
- 1/3 cup (25g) finely grated parmesan cheese
- 1/4 cup fresh chives, finely chopped
- 125 gram (4 ounces) smoked ham, chopped finely
- 2/3 cup (80g) gruyère cheese, coarsely grated
- 30 gram (1 ounce) butter
Method
Cheesy ham omelette
- 1Beat egg whites in large bowl with electric mixer until soft peaks form. Combine egg yolks, parmesan and half the chives in another large bowl. Gently fold whites into yolk mixture.
- 2Combine ham and gruyère in medium bowl.
- 3Heat one-quarter of the butter in small frying pan, add one-quarter of the egg mixture, sprinkle with one-quarter of the ham mixture. Cook over medium heat until mixture is almost set. Fold omelette in half, transfer to plate, cover to keep warm.
- 4Repeat step 3 to make a further three omelettes. Serve omelettes sprinkled with remaining chives.
