Beef and reef with kumara hash browns

The classic surf'n'turf, beef and prawn, dish with delicious homemade kumara hash browns and corn.

Method

1.Boil, steam or microwave kumara until tender; drain. Mash kumara in medium bowl with onion, chives and egg yolk.
2.Meanwhile, shell and devein prawns leaving tails intact. Combine salt, pepper and paprika in large bowl, add prawns; toss prawns to coat in mixture.
3.Cut corn in half crossways then in half lengthways. Cook steaks and corn on heated oiled barbecue (or grill plate) until steaks are cooked as desired and corn is tender. Cover to keep warm.
4.Shape kumara mixture into four patties. Cook patties on heated oiled flat plate, flattening with spatula, until browned both sides.
5.Make garlic butter. Combine ingredients in small bowl.
6.Cook prawns on heated oiled barbecue until changed in colour.
7.Top steaks with prawns and butter. Serve with corn and hash browns.
