  • 4 large vine-ripened tomatoes (480g)
  • 250 gram cherry bocconcini cheese
  • 1 large avocado (320g), halved
  • 1/4 cup loosely packed fresh basil leaves
  • 2 tablespoon olive oil
  • 1 tablespoon olive oil

Method

    Thickly slice tomatoes, cheese and avocado.

    Arrange tomato, cheese and avocado on a serving platter; top with basil leaves, drizzle with combined oil and vinegar. Sprinkle with freshly ground black pepper, if you like.
