Caprese salad

This classic Italian salad featuring sliced fresh mozzarella, tomatoes, and sweet basil is proof that the simple things are often the best.

Ingredients

Caprese salad
  • 900 grams heirloom tomatoes, sliced
  • 500 gram bocconcini, sliced
  • 1/2 cup fresh basil leaves, sliced thinly
Dressing
  • 1 shallot
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tablespoons red wine vinegar

    Make dressing
  • 2
    Arrange tomato, mozzarella and three-quarters of basil on a large serving platter. Drizzle with dressing and top with remaining basil and serve. Season with salt and pepper.

    Place ingredients in a screw-top jar; season to taste. Shake well.
