Caprese salad
This classic Italian salad featuring sliced fresh mozzarella, tomatoes, and sweet basil is proof that the simple things are often the best.

- 900 grams heirloom tomatoes, sliced
- 500 gram bocconcini, sliced
- 1/2 cup fresh basil leaves, sliced thinly
Dressing
- 1 shallot
- 1/4 cup (60ml) extra virgin olive oil
- 2 tablespoons red wine vinegar
Method

- 1Make dressing
- 2Arrange tomato, mozzarella and three-quarters of basil on a large serving platter. Drizzle with dressing and top with remaining basil and serve. Season with salt and pepper.

- 3Place ingredients in a screw-top jar; season to taste. Shake well.
