1.Preheat oven to 180°C. Lightly grease and line a deep 20cm x 30cm slice pan with baking paper.
2.In a food processor, combine flour, sugar, butter and baking powder. Process until mixture resembles breadcrumbs. Add egg and vanilla. Pulse until a crumbly dough forms.
3.Press half dough evenly over base of pan. Bake for 10 minutes. Cool slightly.
4.Meanwhile, to make the filling; in a large bowl, combine all ingredients. Mix well. Spread evenly over base.
5.Crumble remaining dough evenly over fruit mixture. Sprinkle with cinnamon. Bake for 35-40 minutes, until golden brown. Cool completely in pan. Cut into rectangles.
Keep in a sealed airtight container in fridge or freeze for up to one month.
