Frozen yoghurt bark

Looking for a new snack idea to try this summer? The yoghurt bark mixture is studded with raspberries before the baking tray is placed in the freezer, resulting in a fun frozen yoghurt snack. The kids will love it!

Ingredients

Method

1.

Line a large oven tray with baking paper.

Blend mashed banana, yoghurt, maple syrup and vanilla until smooth.

3.

Pour mixture onto tray. Top with crushed frozen raspberries. Freeze 2 hours or until set.

4.

Break into pieces. Store bark in a container in the freezer for up to a month.

For an even healthier adult version of this recipe, pat dry a 250g block of silken tofu and reduce yoghurt to ¼ cup (70g) when blending with the other ingredients.
