Buffalo chicken wings with blue cheese sauce

A smoky chipotle and Mexican hot sauce mix cretaes the spicy buffalo sauce, tempered by a creamy blue cheese sauce for a delicious snack or party starter.

1.Preheat oven to 120°C/250°F. Line a large oven tray with baking paper; place a wire rack on top.
2.Pat chicken wings dry with paper towel; place in a bowl. Add combined baking powder, garlic powder, salt and 2 teaspoons onion powder; toss well to coat wings. Arrange wings in a single layer on wire rack; cook for 30 minutes. Increase oven to 220°C/425°F; cook for a further 40 minutes or until crisp.
3.Meanwhile, to make blue cheese sauce, stir blue cheese, sour cream, milk and remaining onion powder in a small bowl until combined. Season to taste. Refrigerate until required.
4.To make buffalo sauce, place chipotle sauce, hot sauce, sugar, spice mix and vinegar in a small saucepan; stir over low heat until sugar dissolves. Simmer for 3 minutes or until thickened.
5.Place chicken wings in a large bowl; pour over the buffalo sauce and toss to coat. Arrange on a platter; serve with celery stalks and blue cheese sauce.
