Spaghetti with rocket, parmesan and pine nuts

Rocket, garlic and chilli add lots of peppery heat to this quick but flavoursome spaghetti dish, while pine nuts and parmesan bring the whole dish together.

Ingredients

200 gram spaghetti

1/4 cup (60ml) olive oil

2 clove garlic, crushed

1 red thai chilli, chopped finely

1/4 cup (40g) roasted pine nuts

1/2 cup (40g) flaked parmesan cheese

100 gram baby rocket leaves

Method

1.Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.

2.Meanwhile heat oil in small saucepan; cook garlic and chilli, stirring, about 30 seconds or until garlic just softens and is fragrant (do not brown the garlic).

3.Place hot drained pasta and oil mixture in large bowl with pine nuts, cheese and rocket; toss to combine.
