Pearl barley salad

Textural, substantial and with an earthy flavour, pearl barley is an incredibly versatile grain that can be used in soups, stews and salads. It’s also packed with nutrients and low in kilojoules.

1.Cook barley in small saucepan of boiling water, uncovered, about 25 minutes or until tender; drain. Cool 5 minutes.
2.Meanwhile, boil, steam or microwave asparagus until just tender; drain.
3.Place barley and asparagus in medium bowl with remaining ingredients; toss gently to combine.
