Method

1.Combine chicken, celery, onion, mustard and mayonnaise in a small bowl, season.
2.Divide chicken mixture between 4 slices of bread, top with remaining slices of bread.
3.Melt one-quarter of the butter in a medium frying pan over medium heat, cook sandwiches, one at a time, until golden on both sides, adding butter as needed.
