Using a fork, combine milk, olive oil, lemon juice, lemon zest and sugar in the base of a microwave-safe mug.
Stir in the flour, bicarb and a pinch of salt until smooth. Microwave on high for 1½-2 minutes or until just cooked through.
Allow to cool for 1 minute before topping with cream and fresh passionfruit.
Mug cake cooking tips
Microwave mug cakes are best eaten as soon as they are cooked. The texture can become a little tough on cooling.
By the very nature of this style of cooking the cake will rise and fall slightly when cooked, making a natural well for lots of cream and fresh passionfruit! Cooking time will depend on the wattage of your microwave oven and the shape of the mug. We had success with a shallower, wider 330ml mug.
