Take the flavour up a notch with these kimchi noodles. a spicy dinner for one. Ready in just 15 minutes, these soba noodles with prawns, kimchi and broccolini are the ultimate quick and easy dinner.

Method

Bring a medium saucepan of salted water to the boil. In a small bowl combine prawns, kimchi, kimchi liquid and honey until prawns are well coated; set aside for 5 minutes.

To make dressing, combine all ingredients in a small jug; season to taste.

Add soba noodles to saucepan of boiling water and cook as per packet instructions. When the noodles have 3 minutes left, add the broccolini. Drain and return noodles and broccolini to the pan with the dressing and edamame. Toss to combine.

Heat oil in a small frying pan over medium-high heat; add prawns and cook, turning occasionally, for 3 minutes or until just cooked through. Add prawns and coriander to noodles and toss to combine; season to taste.
5.
Transfer to a shallow bowl and sprinkle with sesame seeds.
