Clear prawn and pasta soup



1.Shell and devein prawns, leaving tails intact.
2.Cook pasta in large saucepan of boiling water, uncovered, until just tender, drain.
3.Meanwhile, combine stock, the water, galangal, ginger, lime leaves and lemon grass in large saucepan, bring to a boil. Boil, uncovered, about 5 minutes or until reduced by a quarter. Add juice, sauce, sambal and prawns, reduce heat, cook, uncovered, until prawns just change in colour. Remove from heat, discard lime leaves. Add chilli and coriander.
4.Divide pasta and prawn mixture among serving bowls, ladle soup over the top.
