Braised peas with spring onion and bacon

Like a warm salad, these French style braised peas with spring onion and bacon makes an excellent side dish.

1.Put the peas in a medium bowl and leave them until they have thawed.
2.Meanwhile, trim the rind and fat from the bacon and throw it away; chop the bacon coarsely.
3.Trim the onions. Cut the bottom third of the green ends into 4cm lengths. Cut the white bulbs in half.
4.Heat the butter in a large saucepan on the stove over medium-high heat until melted. Add the bacon to the pan. Cook, stirring with a wooden spoon, for about 5 minutes or until the bacon is browned.
5.Add the onion to the pan; cook, stirring, for about 4 minutes or until the onion is softened. Add the peas and the water. Put a lid on the pan and cook for 5 minutes. Stir in the parsley. Season to taste with salt and pepper.

Goes well with grilled lamb or pork chops.
