Ingredients

Method

1.Sift flour, sugar and bicarbonate of soda into a large bowl. Whisk egg, buttermilk and butter in a jug. Gradually stir egg mixture into flour mixture until smooth.
2.Spray a frying pan with cooking oil spray and heat on medium. Place four heaped tablespoons of batter into pan to make four pikelets and scatter each with a few blueberries. Cook for 2 minutes, until bubbles appear on surface. Turn and cook for 30 seconds, until lightly browned. Remove to a plate and cover to keep warm. Cook remaining batter to make 24 pikelets.
3.Serve pikelets with a dollop of yogurt and extra blueberries on top.
