1.Whisk eggs, milk, sugar and sifted flour and soda in medium bowl until batter is smooth.
2.Melt 1 teaspoon of the butter in medium frying pan. Pour ⅓ cup of batter into pan, spread into a round shape. Cook about 2 minutes or until bubbles appear on the surface; turn flapjack over, cook until browned underneath. Transfer to plate; cover to keep warm. Repeat with remaining butter and batter to make a total of 8 flapjacks.
3.Cut bacon slices lengthways into 3 pieces. Cook bacon in heated large frying pan until crisp. Drain on absorbent paper.
4.Serve flapjacks topped with bacon and maple syrup.
