One pan layered burrito bowl

This one pan layered burrito bowl will have the kids asking for seconds. For this super-tasty crowd pleaser all you’ll need a 30cm cast iron shallow casserole pan and a few simple ingredients. A packet of mince, a can of beans and some fridge and pantry staples collide to create a Mexican twist on lasagne but without all the fuss!

Instead of standard tomato salsa, we used a super smoky chipotle salsa. It contains fire roasted tomatoes and chipotle chillies which are smoked jalapenos.

Finely chop the onion and garlic. Pick the coriander leaves and reserve; finely chop roots and stems. Rinse and drain kidney beans. Juice the lime. Mash avocado in a small bowl; stir in the lime juice and season with sea salt and freshly ground black pepper.

Preheat oven to 180C (160C fan forced).

Heat oil in the casserole over medium-high heat. Cook onion, garlic and coriander roots and stems for 3 minutes or until onion is softened. Add beef; cook, breaking up with a wooden spoon, for 5 minutes or until browned. Add spice blend and beans; stir until well combined to a large bowl. Wipe casserole clean.

Place a burrito wrap on the base of the casserole. Spoon over a third of the meat mixture, a third of the salsa, a quarter of the reserved coriander leaves and a third of the cheese. Repeat layering twice more, finishing with the cheese. Bake for 30 minutes or until top is golden. Stand for 5 minutes before slicing.

Top burrito bake with mashed avocado, sour cream, hot sauce and remaining coriander leaves. Serve with lime wedges.

MAKE IT GLUTEN FREE: We used jumbo flour tortillas but corn tortillas will work as well.

MAKE IT VEGETARIAN: Use plant-based mince instead of beef mince for a vegetarian version.

What is the ‘Mexican cheese’ used in this burrito bowl?

Instead of grating your own cheddar cheese grab a bag of pre-grated Mexican cheese. A mix of mozzarella, red cheddar and colby, it’s designed for a quick melt and a mild flavour.

How to wash coriander

As we use the whole bunch of coriander, it’s important to wash the roots and stems thoroughly to remove any dirt or grit.

Get the most from your limes

Limes are expensive, so to get maximum juice, pop it in the microwave on high for 20 seconds or until warm. As the microwave heats the fruit from the inside out, the juice capsules burst within the fruit. Once the fruit has cooled enough to handle, slice it open and juice as normal. Alternatively, rolling the lime back and forth a few times on the bench will have a similar effect.
